If you remove the existing assignments from Cmd+↑/↓ or Cmd+Shift+↑/↓, those keys fall back to moving or selecting to the start or end of the document. You can also assign the Move to Document Start/End and Select to Document Start/End commands directly.
Find in Document and Replace in Document have no default shortcut. Open them from the search panel's mode menu or from Find Action.

Customizing Shortcuts
Open Settings > Keyboard > Keyboard Shortcuts to reassign shortcuts for navigation, editing, formatting, and app commands. Assignments sync across devices through iCloud.
Combinations other than Command are supported (for example, Ctrl+key).
Default shortcuts are listed on this page; your assignments may differ. See Find Action for searching and running commands, and Palettes for Move to, Find, and Bookmarks.
